A hearty high protein breakfast pizza loaded with eggs, sausage, cheese, and a crisp crescent roll crust.

Ingredients

2 tubes (8 ounces each) refrigerated crescent roll dough or 1 store-bought pizza crust

8 large eggs

2 tablespoons water

1/2 teaspoon salt, plus more to taste

1/4 teaspoon ground black pepper

1/2 tablespoon olive oil

1/2 pound breakfast sausage, cooked and crumbled

1 cup shredded Monterey Jack cheese

1 cup shredded Cheddar cheese

1/2 cup real bacon pieces, optional

1 cup frozen hash brown potatoes, thawed, optional

Sliced green onions for garnish

Hot sauce for serving, optional

Instructions

1. Preheat oven to 400°F and lightly coat a pizza pan or baking sheet with cooking spray or sprinkle with cornmeal.

2. If using crescent dough, unroll and press the dough evenly over the pan, firmly sealing the seams; bake 7–8 minutes until lightly browned. If using a prepared crust, follow package directions for par-baking if needed.

3. While the crust bakes, cook the breakfast sausage in a skillet over medium heat for about 5 minutes, breaking into crumbles. Drain excess fat and set aside.

4. In a medium bowl, whisk together the eggs, water, 1/2 teaspoon salt, and pepper until well combined.

5. Heat olive oil in a nonstick skillet over medium heat. Pour in the egg mixture and cook, stirring gently, 3–4 minutes until just set with no liquid egg remaining.

6. Remove the pre-baked crust from the oven and spread the scrambled eggs evenly over the surface.

7. Sprinkle cooked sausage crumbles evenly over the eggs.

8. Top with Monterey Jack and Cheddar cheeses, then sprinkle bacon pieces and hash browns over the top if using.

9. Return the pizza to the oven and bake 5–7 minutes, or until the cheese is melted and bubbly and the crust is golden.

10. Remove from the oven, garnish with sliced green onions, and let cool for about 2 minutes.

11. Slice into 8–12 pieces, add hot sauce if desired, and serve warm.

Notes

Par-baking the crust keeps it from getting soggy under the eggs and sausage.

Customize with your favorite cheese blend or add veggies like bell peppers or mushrooms.

Great make-ahead option: cook sausage and scramble eggs in advance, then assemble and bake in the morning.
