Potsticker Stir Fry combines savory dumplings, crisp vegetables and a bold sauce into a one‐pan weeknight win.

Ingredients

10‑12 frozen potstickers (or any gyoza filling)

1/4 cup water

1 large carrot, thinly sliced on the bias

5‑6 white button mushrooms, sliced

1 cup broccoli florets

20 green beans, sliced in thirds

1/4 cup diced onion

2 tbsp sesame oil

2 tbsp olive oil

2 scallions, chopped (for garnish)

Sesame seeds (optional, for garnish)

Sauce:

1/4 cup reduced‑sodium soy sauce

1/4 cup rice vinegar

1 tbsp honey or sugar

1 tbsp cornstarch

1 tbsp cold water

1 tsp grated fresh ginger

Instructions

1. Whisk together all sauce ingredients in a small bowl and set aside.

2. Slice carrot, mushrooms and green beans; separate broccoli into smaller florets and dice the onion.

3. Add 1 tbsp olive oil + 1 tbsp sesame oil to a large skillet over medium‑high heat. Add the frozen potstickers flat side down.

4. Fry potstickers for 3‑4 min until bottoms are golden brown. Add 1/4 cup water, cover and steam for 3‑4 more min.

5. Remove potstickers and set aside. In same skillet add 1 tbsp olive oil, sauté mushrooms + onions until browned (≈3 min).

6. Add 1 tsp sesame oil and the broccoli. Cook broccoli ≈3 min until bright green. Then add green beans + carrots and stir‑fry ≈3 min until al dente.

7. Return mushrooms, onions, broccoli, green beans, carrots and potstickers to skillet. Pour in sauce and toss gently. Cook 1‑2 min until sauce thickens and everything’s coated.

8. Transfer to serving platter. Sprinkle with scallions and sesame seeds. Serve hot.

Notes

Store leftovers in an airtight container in the fridge up to 3 days.

Reheat in a skillet with a splash of water; avoid microwave to preserve crisp.

Freeze single portions after cooking, thaw overnight, then reheat in skillet for best texture.
