Ingredients

Scale

4 tbsp butter (for caramelizing onions)

2 large yellow onions, thinly sliced

Salt and pepper to taste

1 crisp apple (e.g., Honeycrisp), thinly sliced

1 ripe pear (e.g., Bosc), thinly sliced and cored

8 slices quality bread (sourdough or whole grain)

4 slices cheddar cheese (or preferred melting cheese)

2 oz fresh goat cheese or blue cheese (optional)

2 tbsp fresh sage or thyme, chopped

4 tbsp softened butter (for toasting bread)

2 eggs, sunny-side up (optional)

2 handfuls arugula or spinach (optional)

4 tbsp fig preserves (optional)

Instructions

1. Melt 4 tbsp butter in a skillet over medium-low heat. Add onions and cook for 8–10 minutes until soft.

2. Season with salt and pepper. Reduce heat to low and cook for another 35–45 minutes, stirring occasionally, until deeply golden.

3. Stir in chopped herbs in the final minutes. Set aside.

4. Sauté sliced apples and pears in butter for 1–2 minutes per side until slightly softened.

5. Butter the outside of 8 bread slices. On 4 of them, layer cheese, onions, fruit, and any optional toppings.

6. Top each with another slice of bread, buttered side out.

7. Grill sandwiches over medium-low heat for 5–6 minutes per side, until golden and cheese is melted.

8. Optional: Top with sunny-side up eggs and serve with greens.

Best served immediately. Store leftovers in the fridge for up to 2 days.

Reheat in a 350°F oven for 8–10 minutes—avoid the microwave.
