Pear & Arugula Salad with Honey Vinaigrette brings together crisp peppery arugula, juicy sweet pears, crunchy toasted nuts, and creamy cheese — all elevated with a bright, house‑made honey vinaigrette. Light, elegant, and ready in minutes.
5 oz arugula, washed and dried
2 ripe pears, thinly sliced
4 oz goat cheese, crumbled (or Manchego, feta, or Parmesan)
1/2 cup walnuts or almonds, toasted
2 tbsp extra virgin olive oil
2 tbsp sunflower oil
2 tbsp apple cider vinegar
2 cloves garlic, minced
1 tbsp honey
1 tsp whole grain mustard
1/4 tsp sea salt (or to taste)
Freshly ground black pepper, to taste
1. Add arugula to a large serving bowl. Top with sliced pears, crumbled cheese, and toasted nuts.
2. In a small jar or bowl, whisk together olive oil, sunflower oil, apple cider vinegar, minced garlic, honey, mustard, and sea salt until dressing emulsifies.
3. Pour the vinaigrette over the salad and toss gently to coat evenly.
4. Season with freshly ground black pepper to taste. Serve immediately.
Toast the nuts briefly in a dry skillet over medium heat for 3–5 minutes until fragrant — let them cool before adding.
For extra crunch and variety, try pecans, hazelnuts, or sliced almonds instead of walnuts.
If you want a vegan version, swap goat cheese for a plant-based cheese and use maple syrup or agave instead of honey.
Dressing can be prepared ahead and stored in a mason jar in the fridge for up to 5 days — shake well before using.
