A cozy, hearty soup featuring savory Italian sausage, ditalini pasta, and melty Parmesan cheese—perfect for chilly nights.

Ingredients

1 pound Italian sausage, casings removed

1 cup ditalini pasta

6 cups chicken broth

1 cup diced tomatoes

1 onion, chopped

2 cloves garlic, minced

1 cup spinach leaves

1 cup grated Parmesan cheese

Salt and pepper to taste

2 tablespoons olive oil

Instructions

1. Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it into smaller pieces.

2. Add chopped onion and minced garlic. Sauté until the onions are translucent, stirring frequently.

3. Pour in the chicken broth and diced tomatoes. Bring to a boil, then reduce to a simmer.

4. Add the ditalini pasta and cook until al dente, about 8-10 minutes, stirring occasionally.

5. Toss in the spinach leaves and simmer for an additional 2 minutes until wilted.

6. Stir in grated Parmesan cheese until melted. Season with salt and pepper to taste.

7. Serve hot, garnished with extra Parmesan cheese if desired.

Notes

For a lighter version, substitute turkey sausage. You can also use Pecorino or Asiago cheese for a flavor twist. Freeze leftovers in airtight containers for up to two months.
