A flavorful one-pan balsamic chicken cooked with tomatoes, mozzarella, and fresh basil.

Ingredients

2 pounds boneless, skinless chicken breasts

2 tablespoons avocado oil or olive oil

1/3 cup balsamic vinegar

2 tablespoons honey

2 garlic cloves, minced

1 teaspoon Italian seasoning

1 tablespoon Dijon mustard

8 ounces grape tomatoes, halved

8 ounces fresh mozzarella balls

2 tablespoons fresh basil, chopped

Kosher salt and black pepper to taste

Instructions

1. Pound chicken to even thickness and pat dry.

2. Whisk balsamic vinegar, honey, garlic, Italian seasoning, Dijon, salt, and pepper.

3. Combine tomatoes, mozzarella, and basil in a separate bowl; season lightly.

4. Heat oil in an oven-safe skillet over medium-high heat.

5. Season chicken and sear 1–2 minutes per side until golden.

6. Pour balsamic sauce over chicken and bring to a simmer; scrape browned bits.

7. Preheat oven to 400°F.

8. Transfer skillet to oven and bake 12–15 minutes until chicken reaches 165°F.

9. Top with tomato-mozzarella mixture and bake 3–5 minutes more until warmed.

10. Rest 5 minutes before serving.
