Crispy, cheesy Mediterranean-inspired spinach and feta bites baked until golden with irresistible crunchy edges—perfect for easy snacking, party platters, or a quick savory appetizer.

Ingredients

1 cup fresh spinach, finely chopped

1/2 cup crumbled feta cheese

1/4 cup grated Parmesan cheese

1/4 cup shredded mozzarella cheese

1 large egg, beaten

1 tablespoon olive oil, plus extra for brushing

1 clove garlic, minced (or 1/2 teaspoon garlic powder)

1/2 teaspoon dried oregano

1/4 teaspoon black pepper

Pinch of salt, to taste

810 small squares of phyllo or thin pastry (optional, for extra crunch)

Non-stick spray or parchment paper for the baking tray

Instructions

1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper (or spray lightly with nonstick spray).

2. In a bowl, mix spinach, feta, Parmesan, mozzarella, egg, olive oil, garlic, oregano, pepper, and salt until evenly combined.

3. If using phyllo/pastry, place squares on the tray; otherwise, scoop tablespoon-sized mounds of the mixture onto the parchment.

4. Flatten each mound gently with the back of a spoon to help them bake evenly and crisp at the edges.

5. Brush tops lightly with a little extra olive oil for more golden color and crunch.

6. Bake 15–20 minutes, until edges are deep golden and centers are set.

7. Cool on the tray for 5 minutes, then transfer to a rack and serve warm or at room temperature.

Notes

For extra crunch, bake the mixture on small phyllo squares, but they’re delicious without.

Keep scoops small and flattened for maximum crispiness.

Great with tzatziki, hummus, or a squeeze of lemon.
