Meatloaf with Mashed Potatoes and Cheese is the ultimate comfort meal—juicy beef, creamy potatoes, and melted cheddar combine in a soul-satisfying classic everyone loves.

Ingredients

1 pound ground beef

1 egg

1 cup breadcrumbs

1/2 cup milk

1 onion, diced

2 cloves garlic, minced

Salt and pepper to taste

1 cup cheddar cheese, shredded

4 cups potatoes, peeled and cubed

1/2 cup butter

1/2 cup heavy cream

Instructions

1. Preheat oven to 350°F (175°C). In a large bowl, mix ground beef, egg, breadcrumbs, milk, onion, garlic, salt, and pepper.

2. Form into a loaf and place in a loaf pan. Bake for 45 minutes or until the internal temperature reaches 160°F (71°C).

3. While baking, boil potatoes in salted water for 15–20 minutes until tender. Drain and return to pot.

4. Add butter and cream to potatoes and mash until smooth. Mix in half of the cheddar cheese.

5. Top the baked meatloaf with the remaining cheese and return to oven for 5 minutes, until cheese melts.

6. Serve slices of meatloaf with mashed potatoes, garnished with extra cheese if desired.

Notes

Store leftovers separately in airtight containers. Refrigerate for up to 3 days or freeze for up to 2 months. Reheat meatloaf in oven and potatoes on stove or microwave.
