A London fogg cake with lavender cream cheese frosting combines the cozy notes of Earl Grey tea and lavender in a moist cake, finished with a tangy, floral cream cheese topping.

3 tbsp Earl Grey tea

1 tbsp culinary lavender

2 1/4 cups all-purpose flour

1 1/2 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

10 tbsp unsalted butter, softened

1 1/2 cups granulated sugar

3 eggs, room temperature

1 tbsp vanilla bean paste

1 cup buttermilk

1 cup Earl Grey tea (for milk soak)

1/2 cup sugar (for milk soak)

1/2 cup whole milk (for milk soak)

1 cup unsalted butter, softened (for frosting)

8 oz cream cheese, cold (for frosting)

2 cups powdered sugar (for frosting)

1 tsp vanilla bean paste (for frosting)

1/2 tsp ground culinary lavender (for frosting)

Purple food coloring, optional

Instructions

1. Preheat oven to 350°F and grease a 9×9 inch metal pan. Line with parchment paper.

2. Grind Earl Grey tea and lavender in a food processor, then sift out large bits.

3. Whisk together flour, ground tea-lavender, baking powder, baking soda, and salt.

4. Cream butter and sugar until fluffy. Add eggs and vanilla paste; beat until smooth.

5. Alternate adding flour mix and buttermilk to wet ingredients, mix until just combined.

6. Pour batter into pan. Bake 35–40 minutes until toothpick comes out clean.

7. Meanwhile, simmer milk soak ingredients until sugar dissolves; cool.

8. Poke warm cake with skewer. Pour cooled milk soak evenly over cake.

9. Grind more lavender for frosting. Sift out large bits.

10. Beat butter 5 mins until pale. Add cream cheese and beat 1 min more.

11. Add sugar, vanilla, lavender, and color. Beat until smooth and fluffy.

12. Frost cooled cake with thick layer of cream cheese frosting. Slice and serve.

Notes

Use culinary lavender only—regular lavender can be too strong.

You can freeze the unfrosted cake for up to 2 months.

Try using chai tea instead of Earl Grey for a flavor twist.

Add berries between layers for variation.
