Loaded Nachos Salad is a vibrant, crunchy, and flavor-packed Tex-Mex twist on classic salad.
1 bag of baked tortilla chips
1 cup romaine lettuce, chopped
1/2 cup baby spinach
1 cup black beans, drained and rinsed
1 cup grilled chicken, diced (optional for vegetarians)
1 ripe avocado, sliced
1/2 cup cheddar cheese, shredded
1/4 cup pickled jalapenos
1/2 cup fresh salsa
1/4 cup sour cream
Squeeze of lime juice
Salt and pepper to taste
1. Layer the baked tortilla chips on a large platter.
2. Evenly scatter the romaine lettuce and baby spinach over the chips.
3. Next, add the black beans and grilled chicken across the greens.
4. Add slices of avocado, pickled jalapenos, and shredded cheddar cheese.
5. Spoon the fresh salsa over the salad and add dollops of sour cream.
6. Finish with a squeeze of lime juice and season with salt and pepper.
7. Toss gently to combine just before serving.
