2 medium zucchinis, sliced
2 chicken breasts, cubed
1 cup shredded mozzarella cheese
1/2 cup parmesan cheese, grated
2 cloves garlic, minced
1 teaspoon dried oregano
Salt and pepper to taste
2 tablespoons olive oil
1/2 cup cherry tomatoes, halved
1. Preheat your oven to 375°F (190°C). Slice zucchinis and cube chicken breasts.
2. In a skillet, heat olive oil and sauté garlic until fragrant. Add chicken, season with salt and pepper, and cook until lightly browned.
3. In a baking dish, layer sliced zucchinis at the bottom. Add cooked chicken and cherry tomatoes.
4. Sprinkle mozzarella and parmesan cheese evenly over the top.
5. Season with dried oregano.
6. Bake for 25-30 minutes or until cheese is golden and bubbly.
