Ingredients

1 pound lean ground chicken

2 tablespoons extra-virgin olive oil, divided

1 medium red onion, finely diced

2 teaspoons dried oregano

1 teaspoon garlic powder

1 teaspoon ground cumin

½ teaspoon ground coriander

Juice and zest of 1 lemon

Salt and black pepper to taste

2 cups cooked rice (white, brown, or jasmine)

2 tablespoons fresh dill, chopped

1 cup cherry tomatoes, halved

1 long English cucumber, diced

½ cup kalamata olives, sliced

½ cup crumbled feta cheese

1 cup plain Greek yogurt

3 garlic cloves, minced

2 tablespoons fresh parsley, chopped

Pita bread for serving (optional)

Instructions

1. Cook rice according to package directions and toss with fresh dill, lemon juice, salt, and pepper.

2. Combine Greek yogurt, garlic, dill, lemon juice, salt, and pepper to make tzatziki; refrigerate.

3. Heat 1 tablespoon olive oil in a skillet over medium-high heat and cook onion 2–3 minutes.

4. Add ground chicken; cook 5–7 minutes, breaking into pieces until golden and no longer pink.

5. Season chicken with oregano, garlic powder, cumin, coriander, lemon zest, and lemon juice; adjust salt and pepper.

6. Transfer chicken to a paper towel–lined plate to remove excess oil.

7. Assemble bowls with rice, seasoned chicken, tomatoes, cucumber, olives, and feta.

8. Top with tzatziki and parsley; serve with pita and lemon.
