This Ginger Garlic Chicken Noodle Soup is your go-to comfort food—warm, soothing, and packed with rich flavors from fresh ginger and garlic.
2 tablespoons olive oil
1 onion, finely chopped
4 cloves of garlic, minced
2 tablespoons fresh ginger, grated
1 pound chicken breast, cut into cubes
8 cups chicken broth
2 cups egg noodles
2 cups carrots, sliced
1 cup celery, sliced
Salt and pepper to taste
Fresh cilantro and lime wedges for garnish
1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
2. Stir in the garlic and ginger, cooking until fragrant. Be careful not to burn them.
3. Add the cubed chicken and cook until golden brown on all sides. Season with salt and pepper.
4. Pour in the chicken broth and bring to a gentle boil. Toss in the carrots and celery and simmer until vegetables are just tender.
5. Stir in the egg noodles and cook until soft and flavorful.
