French Onion Chicken Rice blends rich caramelized onions, juicy chicken, and savory rice into a one-skillet wonder perfect for weeknights or cozy dinners.

Ingredients

2 pounds of chicken breasts

2 cups of rice

3 large onions, thinly sliced

3 tablespoons of butter

4 cups of chicken broth

1 cup of shredded Gruyère cheese

Salt and pepper to taste

Fresh thyme for garnish

Instructions

1. In a large skillet, melt the butter over medium heat. Add the onions and cook until they are caramelized, stirring occasionally. It should take about 20 minutes.

2. Season the chicken breasts on both sides with salt and pepper. Move the onions to the side and add the chicken to the skillet, cooking until browned on both sides.

3. Pour in the chicken broth and bring the mixture to a simmer. Add the rice, stirring well to combine.

4. Cover the skillet and let it cook over low heat until the rice is tender and the chicken is cooked through, about 20-25 minutes.

5. Sprinkle the shredded Gruyère cheese over the top and cover again until the cheese is melted. Garnish with fresh thyme before serving.
