Fall Apple Cider Stew Mash is a hearty, comforting dish combining savory beef, sweet apples, and seasonal vegetables in a warm apple cider broth.

Ingredients

2 pounds beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 cup apple cider

2 cups beef broth

3 apples, cored and chopped

4 carrots, sliced

3 potatoes, diced

1 onion, chopped

2 cloves garlic, minced

1 teaspoon thyme

Salt and pepper to taste

Instructions

1. Heat the olive oil in a large pot over medium heat. Add the beef cubes and brown them on all sides. Remove the beef and set aside.

2. In the same pot, add the onions and garlic. Sauté until the onions are translucent, stirring occasionally to prevent burning.

3. Return the beef to the pot. Pour in the apple cider and beef broth. Stir in the thyme, salt, and pepper. Bring to a simmer.

4. Add the apples, carrots, and potatoes to the pot. Give it a good stir to mix everything evenly.

5. Cover the pot and reduce the heat to low. Let it simmer for about 2 hours or until the beef and vegetables are tender.
