Easy Shepherd’s Pie Casserole blends savory beef, vegetables, and creamy mashed potatoes into a comforting, one-dish meal that satisfies any crowd.

Ingredients

Scale

1 lb ground beef

1 onion, chopped

2 cloves garlic, minced

1 cup frozen peas and carrots mix

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 cup beef broth

4 cups mashed potatoes (prepared)

1 cup shredded cheddar cheese

Salt and pepper to taste

1 tablespoon butter

Instructions

1. Preheat your oven to 400°F (200°C). This is crucial for achieving a perfect, crispy potato top.

2. In a large pan, melt the butter over medium heat. Add chopped onion and garlic, sautéing until they’re fragrant and translucent.

3. Increase the heat to medium-high and add the ground beef. Stir occasionally, breaking it up and cooking until browned.

4. Mix in the tomato paste, Worcestershire sauce, and beef broth. Let it simmer until the mixture thickens slightly. Add the peas and carrots, stirring until they’re evenly distributed.

5. Spoon the beef mixture into a baking dish, spreading it out evenly.

6. Carefully layer the prepared mashed potatoes over the beef, smoothing it out to completely cover the surface.

7. Sprinkle the shredded cheddar cheese over the mashed potatoes. This layer will turn golden and bubbly!

8. Bake for 25-30 minutes, until the cheese is golden brown and the filling is bubbling around the edges. Let it cool for a few minutes before serving.

Notes

Store leftovers in the fridge for up to 3 days in an airtight container. Reheat in the oven at 350°F or microwave as needed.

To freeze, assemble the casserole and wrap it tightly. Thaw before baking as directed.
