A crisp, refreshing Cucumber Snack Bowl packed with flavor and ready in 10 minutes. Perfect for busy days, parties, or healthy snacking.

Ingredients

3-4 mini cucumbers (Persian or English)

1 green onion, finely sliced

1 tbsp low-sodium soy sauce (or tamari/coconut aminos)

1 tbsp rice vinegar (or apple cider vinegar)

1 tsp sesame oil

1 tbsp honey or maple syrup

2 cloves garlic, minced

1 tsp chili oil or red chili flakes

1 tsp sesame seeds (optional)

Pinch of salt

Optional add-ins: sliced radish, shredded carrot, roasted peanuts

Instructions

1. Wash cucumbers, cut off ends. For spirals, place between chopsticks and slice at a diagonal, flip, and repeat. Or chop into coins or sticks.

2. Sprinkle cucumbers with salt and let sit for 5 minutes. Drain and pat dry.

3. In a bowl, mix soy sauce, rice vinegar, sesame oil, honey, garlic, and chili oil or flakes. Taste and adjust.

4. Combine cucumbers and green onions in a bowl. Pour dressing over and toss gently.

5. Sprinkle sesame seeds and any extras. Taste, adjust, and serve immediately or refrigerate for later.

Notes

Store cucumbers and dressing separately if meal prepping to maintain crunch.

For extra punch, double the garlic.
