Crunchy on the outside and ultra-cheesy inside, these Crispy Pickle Cheese Bites are packed with tangy dill pickle flavor and fry up golden in minutes—perfect for parties and snack attacks.

Ingredients

56 dill pickles, drained and finely diced (about 1 cup)

8 oz cream cheese, softened

1 ½ cups shredded sharp cheddar cheese

½ tsp salt

½ tsp black pepper

1 tbsp ranch seasoning powder

1 tsp chili flakes (optional)

½ cup all-purpose flour

½ cup water (for slurry)

1 cup panko breadcrumbs

½ tsp paprika

½ tsp garlic powder

Vegetable oil, for frying

Ranch or spicy aioli, for dipping

Instructions

1. Mix cream cheese, cheddar, diced pickles, salt, pepper, ranch seasoning, and chili flakes (if using) in a bowl until well combined.

2. Scoop tablespoon-sized portions and roll into tight balls. Place on a parchment-lined tray and freeze for 30 minutes.

3. Whisk flour, paprika, garlic powder, salt, pepper, and water into a thin batter slurry.

4. Dip each frozen cheese ball into the slurry, letting excess drip off.

5. Roll in panko breadcrumbs, pressing gently to coat well. (Optional: repeat slurry + panko for a double coat.)

6. Heat about 2 inches of oil in a deep skillet to 350°F.

7. Fry in batches for 2–3 minutes until golden brown. Drain on paper towels.

8. Serve hot with ranch or spicy aioli for dipping.

Notes

Freezing helps the bites hold their shape and prevents blowouts in the oil.

For extra crunch, double-coat with slurry and panko.

Keep oil at 350°F—too cool makes them greasy, too hot browns before the center warms.
