Ingredients

Scale

2 large sweet potatoes (orange-fleshed preferred)

2 tablespoons cornstarch

2 tablespoons olive oil

½ teaspoon sea salt (plus extra for finishing)

½ teaspoon smoked paprika

½ teaspoon garlic powder

¼ teaspoon black pepper

Optional: pinch of cayenne, chopped fresh parsley

Instructions

1. Preheat oven to 425°F and line a baking sheet with parchment or grease lightly.

2. Peel (optional) and slice sweet potatoes into uniform ¼-inch matchsticks.

3. Soak sliced fries in cold water for 30 minutes to remove starch. Drain and pat completely dry.

4. Toss fries in cornstarch until lightly coated.

5. Add olive oil and toss again. Season with salt, paprika, garlic powder, black pepper, and cayenne if using.

6. Arrange fries in a single layer on the baking sheet, leaving space between pieces.

7. Bake for 15 minutes, flip fries, rotate pan, and bake another 10–15 minutes until golden and crispy.

8. Cool for 3–5 minutes. Sprinkle with fresh parsley and extra sea salt if desired. Serve immediately.

Notes

Soaking is essential for crispiness—don’t skip it.

Use cornstarch for a light coating that delivers extra crunch.

Don’t overcrowd the baking sheet—space equals crisp.
