1 large egg
¼ to ⅓ cup crumbled Greek feta cheese
1 small tortilla or slice of toast
¼ avocado, mashed
½ teaspoon olive oil or cooking spray
Dried oregano (optional)
Red pepper flakes (optional)
Salt and black pepper, to taste
Fresh chives for garnish (optional)
Squeeze of lemon juice (optional)
1. Heat a nonstick skillet over medium heat and coat lightly with olive oil or spray.
2. Crumble feta into a ring shape in the skillet, leaving a hole in the center.
3. Allow feta to sizzle for 1–2 minutes until it begins to brown and crisp.
4. Crack egg into the center of the feta ring. Add oregano and red pepper flakes if using.
5. Cook undisturbed for 4–5 minutes, adjusting heat to prevent burning.
6. When egg whites are set and feta is crispy, transfer to tortilla or toast.
7. Top with mashed avocado, chives, lemon juice, and season to taste. Serve immediately.
Use block feta you crumble yourself for best crisping—pre-crumbled varieties don’t crisp well.
Keep the heat medium to avoid burning the cheese before the egg sets.
