Creamy Reuben Soup blends the beloved flavors of the classic Reuben sandwich—corned beef, sauerkraut, Swiss cheese—into a warm, comforting bowl of joy. A deli-inspired dish perfect for cozy nights.
1 tablespoon butter
1 cup chopped onion
2 cloves garlic, minced
1/2 pound corned beef, diced
1 cup sauerkraut, drained
4 cups chicken broth
1 cup heavy cream
1 cup shredded Swiss cheese
1 tablespoon whole grain mustard
Salt and pepper to taste
1/4 cup chopped fresh dill
Rye bread croutons (optional)
1. In a large pot, melt the butter over medium heat. Add the onion and sauté until translucent, about 5 minutes. Toss in the garlic and cook for another minute.
2. Add the diced corned beef and sauerkraut to the pot, stirring until everything is well combined and heated through.
3. Pour in the chicken broth and bring the mixture to a simmer. Allow it to cook for 10 minutes, letting the flavors meld together.
4. Reduce the heat and stir in the heavy cream until fully incorporated. Do not let the soup boil once the cream is added.
5. Gradually stir in the Swiss cheese, allowing it to melt evenly into the soup, followed by the mustard. Add salt and pepper to taste.

Store leftovers in the fridge for up to 3 days in an airtight container. Reheat gently on low heat. For freezing, omit the cream and cheese and add them fresh after thawing. For a thicker version, stir in a cornstarch slurry before adding cream.
