3 pounds Yukon Gold or Russet potatoes, peeled and chopped

68 garlic cloves, minced

1 cup heavy cream or half-and-half, warmed

1/2 cup unsalted butter, diced

1/2 cup sour cream

12 teaspoons salt, to taste

1/2 teaspoon freshly cracked black pepper

Fresh chives, parsley, or thyme for garnish (optional)

Instructions

1. Place chopped potatoes in a large pot and cover with cold water. Add half the salt.

2. Bring to a boil, then simmer until potatoes are fork-tender (15–20 minutes).

3. In a small saucepan, gently warm the cream, butter, and garlic over low heat.

4. Drain potatoes and return to pot. Mash by hand or with a hand mixer.

5. Slowly mix in warm cream mixture. Add sour cream, remaining salt, and pepper.

6. Continue mashing until smooth and fluffy.

7. Taste and adjust seasoning. Garnish with herbs if desired.
