3 cups unsweetened almond or cashew milk
1/2 cup pumpkin puree (not pumpkin pie filling)
1/2 cup vanilla protein powder (whey or plant-based)
2 cups rolled oats (gluten-free if needed)
1/4 cup chia seeds
1/4 cup hemp seeds (optional)
2 tablespoons maple syrup (or honey/agave)
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon sea salt
1 teaspoon vanilla extract
Optional toppings: Greek yogurt, toasted walnuts, chopped dates, pomegranate seeds, nut butter, granola
1. In a large bowl, whisk almond milk, pumpkin puree, and protein powder until smooth.
2. Stir in oats, chia seeds, hemp seeds, maple syrup, spices, salt, and vanilla.
3. Divide mixture into four jars or containers with lids.
4. Refrigerate at least 4 hours or overnight for best results.
