Cowboy BBQ Bacon Cheddar Chicken is the ultimate comfort dish—juicy chicken, smoky BBQ, crispy bacon, and bubbling cheddar cheese come together in a flavor-packed skillet meal.
4 boneless, skinless chicken breasts
1 cup smoky BBQ sauce
8 slices bacon, cooked and crumbled
1 cup shredded cheddar cheese
1 tablespoon olive oil
Salt and pepper to taste
1/4 cup ranch dressing
1. Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and pepper.
2. Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken and sear each side for 3-4 minutes until golden brown.
3. Remove the skillet from heat and brush BBQ sauce generously over each chicken breast.
4. Top each with two slices of bacon, then sprinkle cheddar cheese evenly across all pieces.
5. Transfer the skillet to the preheated oven and bake for 20 minutes or until the chicken is cooked through and the cheese is bubbly and golden.
6. Drizzle ranch dressing over the top before serving for an extra layer of flavor.
Use good quality cheddar for best melt and flavor. Make sure bacon is crispy before adding. Reheat leftovers in the oven to preserve texture. For extra flair, add jalapeños or pineapple before baking.
