Ingredients

1 pound of organic chicken breast, diced

2 cups of mixed mushrooms (shiitake, cremini, oyster), sliced

1 medium onion, chopped

3 cloves of garlic, minced

4 cups of homemade chicken broth

2 tablespoons of olive oil

1 teaspoon of fresh thyme leaves

Salt and pepper to taste

Fresh parsley for garnish

Instructions

1. Heat olive oil in a large pot over medium heat. Add chopped onions and sauté until translucent.

2. Add the minced garlic and sliced mushrooms. Sauté until the mushrooms release their juices and start to brown.

3. Introduce the diced chicken breast to the pot, stirring occasionally until the chicken is browned on all sides.

4. Pour in the homemade chicken broth, bringing the mixture to a gentle simmer. Season with salt, pepper, and thyme.

5. Let the soup simmer for about 20 minutes, allowing the flavors to meld together beautifully.
