Clean Chicken Mushroom Soup blends lean protein and savory mushrooms into a comforting, nourishing bowl that’s both satisfying and healthy.
1 pound of organic chicken breast, diced
2 cups of mixed mushrooms (shiitake, cremini, oyster), sliced
1 medium onion, chopped
3 cloves of garlic, minced
4 cups of homemade chicken broth
2 tablespoons of olive oil
1 teaspoon of fresh thyme leaves
Salt and pepper to taste
Fresh parsley for garnish
1. Heat olive oil in a large pot over medium heat. Add chopped onions and sauté until translucent.
2. Add the minced garlic and sliced mushrooms. Sauté until the mushrooms release their juices and start to brown.
