This bold and flavorful cilantro lime chicken with avocado & rice is a one-pan wonder that combines juicy marinated chicken, aromatic jasmine rice, and creamy avocado for a vibrant meal you’ll crave all week.

Ingredients

1.5 pounds boneless, skinless chicken thighs or breasts

4 tablespoons olive oil, divided

1 teaspoon salt

½ teaspoon black pepper

2 cloves garlic, minced

1 tablespoon honey

Juice of 2 limes (about 3 tablespoons)

½ teaspoon chili powder

1 cup jasmine rice, uncooked

3 cups chicken stock

½ cup fresh cilantro, chopped (divided)

2 ripe avocados

½ small red onion, diced

Instructions

1. In a bowl, combine 2 tbsp olive oil, garlic, lime juice, honey, chili powder, salt, and pepper. Add chicken, coat, and marinate at least 20 mins (or overnight).

2. Heat a large skillet over medium-high. Add 2 tbsp olive oil.

3. Sear chicken 5–6 mins per side until golden brown. Remove and set aside.

4. In the same skillet, toast rice for 1–2 mins until fragrant.

5. Add chicken stock and reserved marinade, stirring to scrape browned bits.

6. Return chicken to skillet atop rice. Cover and simmer on medium-low 25–30 mins.

7. Remove from heat, stir in cilantro, and let rest 5 mins.

8. Slice avocados. Divide chicken and rice into bowls. Top with avocado, onion, and extra cilantro. Serve with lime wedges.

Notes

Store chicken and rice in an airtight container up to 4 days.

Freeze chicken and rice (without avocado/cilantro) up to 3 months.

Add fresh avocado and cilantro just before serving.
