Chili Mac is the ultimate comfort food fusion — blending the robust, spicy flavors of chili with the creamy goodness of macaroni and cheese. Perfect for cozy nights, quick family meals, or nostalgic cravings.
1 lb ground beef or turkey
1 onion, finely chopped
2 cloves garlic, minced
2 cups elbow macaroni
1 can (15 oz) kidney beans, drained and rinsed
1 can (14 oz) diced tomatoes
2 cups beef broth
1 cup shredded cheddar cheese
2 tablespoons chili powder
Salt and pepper to taste
1. In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
2. Add the onion and garlic to the pot, sautéing until the onions are translucent.
3. Mix in the chili powder, salt, and pepper, stirring to incorporate the flavors.
4. Add the kidney beans, tomatoes, and beef broth, letting the mixture simmer for about 10 minutes.
5. Stir in the elbow macaroni, cover, and cook until the pasta is tender, about 10 minutes.
6. Reduce heat to low and sprinkle in the cheese. Stir until melted and well combined.
7. Taste and adjust seasoning if necessary, then serve warm with extra cheese or herbs.
Let the dish cool completely before storing. Refrigerate for up to 3 days or freeze for up to 3 months. When reheating, add a splash of water or broth to maintain creamy texture. Great for meal prep or leftovers.
