1 ready-made or homemade pizza dough

1 large boneless, skinless chicken breast (about 8 oz), cooked and sliced

1/2 cup sweet chili sauce

2 cloves garlic, minced

1 tablespoon olive oil

1 small red onion, thinly sliced

1 small red bell pepper, sliced

1 cup shredded mozzarella cheese

1/2 cup shredded Monterey Jack or cheddar cheese

1/4 cup fresh cilantro, chopped (plus more for garnish)

1/2 teaspoon crushed red chili flakes (adjust to taste)

1/2 teaspoon black pepper

1/2 teaspoon salt

2 teaspoons brown sugar (optional)

1 tablespoon rice vinegar (optional)

Instructions

1. Preheat oven to 425°F (220°C) and place pizza stone if using.

2. In a pan, heat olive oil. Sauté garlic for 30 seconds.

3. Add sweet chili sauce, brown sugar, and rice vinegar. Stir and simmer.

4. Add chili flakes, salt, and pepper. Simmer for 1 more minute.

5. Roll out pizza dough and place on tray or stone.

6. Brush dough with chili garlic sauce, leaving 1-inch border.

7. Sprinkle half the cheese. Add chicken, onion, and bell pepper.

8. Drizzle more sauce. Top with remaining cheese and extra chili flakes if desired.

9. Bake for 12–15 minutes until cheese is golden and crust crispy.

10. Cool for 2–3 minutes. Garnish with fresh cilantro.

11. Slice and serve.

Notes

Use naan or cauliflower crust for variations. Adjust chili flakes to control heat. Sprinkle extra cheese when reheating leftovers for more flavor.
