2 cups all-purpose flour

2 teaspoons baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/2 teaspoon salt

1 1/2 cups granulated sugar

1/2 cup packed brown sugar

3/4 cup vegetable oil

4 large eggs

1 1/2 teaspoons vanilla extract

1 cup buttermilk

1 cup chopped pecans or walnuts (optional)

Cream cheese frosting (recipe follows)

Instructions

1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.

2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.

3. In a separate bowl, combine the granulated sugar, brown sugar, and vegetable oil. Beat until well combined.

4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined (do not overmix).

6. Stir in the chopped pecans or walnuts, if desired.

7. Pour the batter into the prepared baking pan and spread evenly.

8. Bake for 30–35 minutes, or until a wooden skewer inserted into the center comes out clean.

9. Let the cake cool completely in the pan before frosting with cream cheese frosting.

Notes

Buttermilk substitute: mix 1 cup milk with 1 tbsp lemon juice or vinegar; rest 5 minutes.

For extra flavor, toast the nuts before adding.

Make ahead: bake the cake a day early, cover tightly, and frost before serving.

Store frosted cake covered in the fridge up to 5 days; bring to room temp 20–30 minutes before serving.
