Crispy bacon, fresh veggies, and a zesty secret sauce wrapped in soft tortillas for the ultimate BLT wrap.
8–10 slices thick-cut bacon, cooked until crisp and drained
4 large flour tortillas or burrito-size wraps
2 cups shredded romaine or iceberg lettuce
2 medium ripe tomatoes, seeded and sliced or diced
1 small avocado, sliced (optional)
Salt and freshly ground black pepper, to taste
1/2 cup mayonnaise
1/4 cup plain Greek yogurt or sour cream
1 tablespoon Dijon or yellow mustard
1 teaspoon lemon juice or mild vinegar
1/2 teaspoon smoked paprika or regular paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Pinch of sugar or honey
Optional: chopped fresh chives or parsley for garnish
1. Cook the bacon in a skillet or in the oven until crisp, then drain on paper towels and let cool slightly.
2. In a small bowl, whisk together the mayonnaise, Greek yogurt or sour cream, mustard, lemon juice, smoked paprika, garlic powder, onion powder, and a pinch of sugar or honey. Season to taste with salt and pepper.
3. Prepare the vegetables by shredding the lettuce, slicing or dicing the tomatoes, and slicing the avocado if using. Pat tomatoes dry with a paper towel to remove excess moisture.
4. Lay one tortilla on a flat surface and spread a generous strip of secret sauce across the center, leaving room at the edges.
5. Crumble or lay a few slices of bacon over the sauce, then add a handful of shredded lettuce, some tomato pieces, and a few avocado slices.
6. Season the fillings lightly with salt and pepper.
7. Fold in the sides of the tortilla, then roll up tightly from the bottom to form a snug wrap. Toast seam side down in a dry skillet for a minute or two if desired.
8. Repeat with remaining tortillas and fillings.
9. Slice each wrap in half on the diagonal, garnish with chopped chives or parsley if desired, and serve immediately.
For extra flavor, use smoked bacon and smoked paprika.
The secret sauce can be made ahead and stored in the fridge for up to 3 days.
Assemble wraps just before serving to keep the bacon crisp and lettuce crunchy.
