The best smothered chicken and rice recipe blends tender, juicy chicken and creamy seasoned rice into one comforting Southern-style dish. Easy to make in one pan.
4 boneless, skinless chicken breasts or thighs
2 tablespoons olive oil, divided
3 tablespoons unsalted butter, divided
1 medium yellow onion, diced
3 cloves garlic, minced
1 cup long-grain white rice (uncooked)
3 tablespoons all-purpose flour
2 cups low-sodium chicken broth
½ cup heavy cream or whole milk
1 can cream of chicken soup (10.5 oz)
1 teaspoon chicken bouillon powder
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon smoked paprika
½ teaspoon dried thyme
¼ teaspoon cayenne pepper (optional)
Salt and black pepper to taste
1 cup mushrooms, sliced (optional)
Fresh parsley for garnish
1. Pat chicken dry, then season both sides with salt, pepper, garlic powder, onion powder, and paprika.
2. Heat 1 tbsp olive oil + 1 tbsp butter in skillet over medium-high. Sear chicken 4–5 min per side until golden and cooked through. Set aside.
3. Melt remaining butter in skillet. Sauté onion for 3 min, then garlic for 30 sec. Add mushrooms if using; cook 3–4 min.
4. Add rice and toast 1–2 min, stirring. Sprinkle in flour; stir to coat rice.
5. Gradually whisk in chicken broth, avoiding lumps. Stir in cream of chicken soup until smooth.
6. Add heavy cream, bouillon, thyme, cayenne (optional). Taste and adjust seasoning.
7. Return chicken to skillet. Bring to simmer, reduce to low, cover.
8. Simmer covered 20–25 min. Stir gently once halfway through.
9. Remove from heat, rest uncovered 5 min. Garnish with parsley and serve.
Use bone-in chicken for extra flavor, adjusting cook time to 45–50 minutes.
Substitute coconut milk for a dairy-free version.
Reheat leftovers gently with broth to maintain creaminess.
