Ingredients

Scale

2 cups fresh broccoli florets, finely chopped

1 cup grated cheddar cheese (or cheese blend)

1 cup Panko breadcrumbs

1 small onion, finely chopped

2 tablespoons red onion, minced

1 teaspoon minced garlic

2 medium eggs, lightly beaten

1/4 cup grated Parmesan cheese (optional)

Salt and freshly ground black pepper to taste

Cooking spray or oil for greasing

Instructions

1. Boil broccoli florets for 5–7 minutes until tender. Drain and press out excess moisture. Transfer to a large bowl.

2. Add cheese, breadcrumbs, onion, garlic, eggs, Parmesan (if using), salt, and pepper. Mix thoroughly.

3. Scoop and roll mixture into 1-inch balls using damp hands.

4. Preheat oven to 300°F. Place balls on a greased wire rack over a baking sheet.

5. Bake for 20–25 minutes until golden and crisp. Internal temperature should reach 165°F.

6. Serve hot with your favorite dipping sauces or enjoy at room temperature.

Notes

Use frozen broccoli if needed—just thaw and drain completely.

To freeze, arrange on a tray, freeze for 2 hours, then store in containers for up to 3 months.

Reheat at 325°F for 12–15 minutes from frozen.

Customize with different cheeses, herbs, or proteins like bacon bits or sausage.
