2 pounds boneless skinless chicken breasts or thighs, cut into 1-inch cubes
1 cup orange marmalade
1 cup BBQ sauce
2–3 tablespoons low-sodium soy sauce
2 large eggs, beaten
1 cup all-purpose flour (or ½ cup flour + ½ cup cornstarch)
Vegetable oil, for frying
1. Whisk orange marmalade, BBQ sauce, and soy sauce together in a bowl until smooth. Set aside.
2. Dip chicken pieces into beaten eggs, then coat lightly with flour. Shake off excess.
3. Heat oil in a large skillet or wok over medium-high heat.
4. Cook chicken in batches for 4–6 minutes per side until golden brown and fully cooked.
5. Drain cooked chicken on paper towels.
6. Return all chicken to the pan and pour sauce over top.
7. Simmer on medium-low for 5–10 minutes, stirring until sauce thickens and coats chicken.
8. Serve hot over rice or with vegetables.
For extra crunch, use half flour and half cornstarch.
Add red pepper flakes for heat or garlic powder for more flavor.
Leftovers keep well refrigerated for up to 3 days.
